Beans-aloo Dry Veg is a perfect accompaniment for everyday meals and tastes great with any Indian bread. This beans-aloo recipe can be make in very less amount of oil and using basic spices. I love to make this dry veg often in my kitchen as its a good source of carbohydrates and goodness of green veggies.

Preparation Time: 10mins  ∏  Cooking Time: 20-25mins  ∏  Servings:2-3 persons

Level:  Beginners (Easy)      ∏  Measurement: 1 Cup ≡ 250 ml ≡ 250gm

Ingredients:

  • 1 cup (250 gm) washed and chopped green beans
  • 2 medium size potato chopped (cubes)
  • 1 large size chopped onion
  • 2 medium size chopped tomato
  • 2-3 green chilly chopped
  • Fistful fresh chopped coriander leaves
  • 1 teaspoon ginger garlic paste
  • 1/2 teaspoon cumin (Jeera) seed
  • 1/2 teaspoon turmeric (haldi) powder
  • 1/4 teaspoon garam masala (optional)
  • 1 teaspoon red chilly powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon dry mango (Amchoor) powder
  • 2-3 teaspoon vegetable oil
  • Salt as per taste

How to make Beans aloo dry veg:

Step1: Turn on flame and heat a pan. Then add oil and let it heat on medium flame, now add cumin seed and fry it for a 10-20seconds on medium flame. Now add onion saute it for 3-4 minutes till it turns out golden brown. Add salt as per your taste.(Adding salt at the beginning will reduce the cooking time).

Step2: Once onions are fried, reduce the flame to low and add ginger garlic paste. Mix and saute it for 1 minutes. Then add turmeric powder, coriander powder, cumin powder and chilly powder mix everything and saute it for 1min then add chopped potato and let it fry for 3-4 minutes on low-medium flame.

Step3: Once potatoes are fried a bit then add chopped beans, saute everything well for 2-3 minutes on medium flame.

Now cover and cook beans and aloo for 6-8 minutes on low-medium flame. Keep stirring in between.

Step4: After 6-8 minutes they must be half way done. Now add tomatoes and mix it.Cover and cook for 8-10 minutes on low medium flame. Keep stirring in between

Step5: Once beans and potatoes becomes soft and tender after 10 minutes, reduce the flame to low. Add amchoor powder, garam masala and saute it for 1-2 minutes. If you like it to be crispy then saute it for 2-3min on high flame till it becomes crispy or you have the desired crispness of the beans. Turn off the flame and garnish it with finely chopped coriander leaves
