Dry fruits laddu is an instant and healthy laddu prepared with variety of dry fruits. It can be opted as a great source of energy and fibre. These healthy Dry fruits laddu also provide stamina before exercise, thereby are often recommended by fitness experts. You can use any kind of dry fruits of your choice.
Dry fruit powder can be made ahead of time and can be easily used in this recipe.
Preparation Time: 15mins ∏ Cooking Time: 30mins ∏ Servings: 20-22 Laddu
Level: Intermediate (Medium) ∏ Measurement: 1 Cup ≡ 250 ml ≡ 250gm
Ingredients:
- 1 cup (or 250gm) wheat flour
- 1-1/2 cup (375gm) Gur (Jaggery)
- 1/2 cup desiccated coconut
- 1/2 cup ghee
- 1/4 cup cashew
- 1/4 cup almonds
- 1/4 cup raisins (Kismish)
- 1/4 cup Fox nut (makhana)(Optional)
- 1/4 cup walnut
- 2-3 teaspoon pistachio
- 7-8 dry khajur
- 5-6 whole cardamom (or 1/2 teaspoon cardamom powder)
- 3-4 teaspoon edible gum resin (or Gond)
- 2-3 teaspoon semolina (Sooji)
- 3-4 teaspoon Sonth (Dry ginger powder)
How to make Dry Fruits Laddu:
Step1: Take out the seeds from the dates. Add seedless dates in the chopped/grinder and dry blend to make a coarsed powder using pulse mode. In the same way grind cashew, almonds, picha, makhana, walnuts. Do not make powder. Finely chop the raisins (kismish).
Step2: Heat a pan on low-medium flame. Add 3-4 teaspoon ghee, once the ghee is slightly warm add gum resin (Gond). Fry it on a low-medium flame till it becomes light and fluffy. Remove it on a paper napkin. (Note: It should be fried on low-medium flame otherwise it will not be crunchy from inside.) If there are large pieces then using rolling pin crush them a bit.
Step3: In the same pan add 1 teaspoon ghee and roast the wheat flour till it becomes light brown in colour on low-medium flame. Stir often while roasting flour. It will give good aroma once roasted. It will take 6-7 minutes, once done remove it on a plate and keep aside.
Step4: Similarly roast the semolina(Sooji) using half teaspoon ghee till it looks dry, separate and crisp. Don’t let it get too brown. Remove it on a plate and keep aside.
Step5: Heat the same pan on low-medium flame. Add 2-3 teaspoon ghee along with crushed jaggery (Gur) let it heat on low flame, Keep stirring. Once it is melted into a smooth syrup add cardamom powder and dry ginger powder. Stir is well and turn off the flame.
Step6: Add roasted wheat flour, Coconut flakes along with all the coarsed mixture of dry fruits into the jaggery syrup. Mix everything well. Let this cool slightly.
Apply ghee on the palm and take about a 2 teaspoon mixture at a time, make round shape laddu and keep it on plate to get it cooled.
(Note: Take care while handling hot mixture, if its too hot let it cool a bit till you are able to bear its heat. Do not cool completely, then you wont be able to make laddus.).
Once it is cooled for couple of hours keep it in a air tight container. Dry Fruit Laddu is ready to be served.
