Masala Dosa

A properly made crisp and savory masala dosa is wonderfully delicious, and fairly simple to make at home. With a traditional spicy potato filling, dosas makes a perfect vegetarian breakfast or lunch. With more interesting chutney and sambhar variaties, the same dosa will taste awesome. Some people like the dosa soft and most of them like crispy dosa. Serve them with your favorite chutney.

How to make Masala Dosa:

Step1: Heat a tawa or griddle on low-medium flame and spread some oil. Take the batter in a large serving spoon, pour the batter in the center of griddle. Using bottom of spoon/ladle, quickly spread batter outward in a circular motion to a diameter of about 7 inches. Pour few drops of oil on and around this.

Now increase the heat to medium-high flame. Leave dosa batter to brown gradually until outer edges begin to look dry. If you want you can flip the other side, when the one side is half cooked. Else you can wait for the top portion to cook completely. With a spatula, carefully loosen dosa from griddle. Bottom should be crisp and beautifully browned.

Step2: Now place the potato filling onto top of dosa, centering it as a strip in the middle of the round dosa. Flatten the potato mixture slightly. Using the spatula, fold the sides of the dosa around the filling to make a cylindrical shape. Take it out from the pan. Prepare other dosa in the same way.

Masala Dosa is ready. Serve it with with Sambhar, Coconut-peanut chutney or capsicum chutney.
