Mini Uttapam is a small version of regular uttapams. Uttapam is a healthy savory pancake all the way from South India. You will find them in restaurants as large as a dinner plate, but I like to make them the size of blinis and serve them as a breakfast to my kid. These come to my rescue on days when I have leftover Dosa batter at home and want to have something filling with loads of veggies.

Making these little South Indian treats are so easy and quick and is loaded with varieties of veggies. It is an ideal morning breakfast recipe that can be made within 10 mins. Veggies added to this makes it more healthy. So, try this recipe to serve it in a kid’s lunch box or as a breakfast item. They will love this for sure. Get creative and use toppings that your family loves. You can just use one topping or go for more like I did.

I have made Mini Uttapams with 7 different toppings: Onion, tomato, spinach, carrot, broccoli, beetroot and capsicum.

How to make Mini Uttapam:

Step1: Take the idli or dosa batter in a bowl and season it with salt. Mix it well. If the batter is too thick, you may add little water.

Step2: Heat 1 teaspoon oil in a large cast-iron or heavy-bottomed non-stick skillet or tawa over medium heat for 1 minute, tilting the skillet to spread it around, until shimmering. Working in batches, drop 1 teaspoon batter into the hot skillet for each uttapam, spacing 1 inch apart; you should be able to cook 4 at a time.

Step3: Working quickly, sprinkle grated carrot, broccoli, tomato and capsicum on top of each pancake before the top cooks.
Step4: Drizzle oil from sides & allow it to cook on medium flame.
Step5: After 2-3 minutes when the base is brown and crisp flip the uttapam & allow the other side also to cook for 2 minutes more, until browned on the other side.
Step6: Transfer the cooked mini uttapams to a platter. Repeat with remaining batter and vegetable toppings, adding more oil as needed.
Step7: You may also prepare a medium size uttapam adding all the topping to make a rainbow. This will definitely attract kids.

Step8: Serve Hot with any chutney of your choice.

Tips:

  • The batter for uttapam should be slightly thick.
  • You may choose less or more veggies as per your choice.
  • Cover the tawa with a lid for fast cooking and softness.
