Mix Veg Macaroni is a variety of dry pasta traditionally shaped into narrow tubes produced in various shapes and sizes. In north america it is also known as elbow macaroni. This recipe consists of lot of green vegetable which makes this recipe tasty,healthy and nutritious all at the same time.You can choose any kind of vegetables as per your liking.This is very much liked by kids, so its a very good option to serve this in your kids lunch box.You can have this recipe anytime in breakfast,lunch or dinner.

How to make Mix veg macaroni:

Step1: To begin making the Mix veg macaroni, get all the ingredients ready for cooking. Cut the vegetables and keep them ready.

Step2: Take a large pan and fill it with 2 cups of water and place it on flame for heating.Once it starts boiling put 1/4teaspoon salt and 1 teaspoon oil in the boiling water along with macaroni.Keep the lid on and cook it for 10mins until al dente (firm yet cooked). Once done, drain the excess water and rinse the macaroni in cold water to prevent excess cooking and to avoid sticking together.

Step3: Now heat oil in a pan on medium heat. Then add the green chilly and grated ginger and Saute it for a minute.Add onion and saute it for 3-4 mins till it turns out golden brown.

Step4: Now add chopped tomato and sprinkle some salt(as per taste) and saute it for a minute then add chopped carrot,bell pepper,green peas and mix everything well and cook it by coving the pan for 3-4 minutes until all the veggies are cooked through.

Step5: Once cooked, open and stir it well and add the amchur powder,garam masala,red chilly powder,black pepper and tomato sauce.Then add the boiled macaroni and mix everything well and toss on high heat until the macaroni gets well coated with the masala.. (If you feel macaroni is quite sticky you can just rinse it will cold water and strain all the water before adding it to the veggies)

Check the salt and spices and adjust to taste. Once done, stir in the chopped coriander leaves and turn off the heat.

Transfer the Mix veg macaroni to a serving bowl and serve warm.
