Tehri is rice dish blended with a bunch of spices, cooked in mustard oil and the mixed veggies make it a healthy meal. Tehri is very easy one pot meal, which my mom used to prepare mostly on Sundays. It really tastes good to have with raita, pickle and can be prepared in very less time. Tehri is usually prepared in pressure cooker which is easier and faster way of cooking. Here I am preparing it on a thick bottom pan.

Preparation Time: 15mins  ∏  Cooking Time: 25mins  ∏  Servings:2-3 persons

Level:Beginners (Easy)  ∏  Measurement: 1 Cup ≡ 250 ml ≡ 250gm

Ingredients:

  • 1 Cup(250 gm) rice
  • 1 medium size chopped onion (slices)
  • 1 medium size tomato chopped
  • 2 green chilly finely chopped
  • Fresh coriander leaves- fistful (finely chopped)
  • 1 medium size potato chopped in small cubes
  • 1/2 cup chopped cauliflower
  • 1/2 cup chopped green beans
  • 1/4 cup finely chopped capsicum
  • 1/4 cup fresh/frozen green peas
  • 1/4 cup (10-15 pieces) nutrela (Soya) chunks
  • 1 teaspoon ginger garlic paste
  • 3-4 Teaspoon mustard oil (or refined)
  • 1 teaspoon garam masala or kitchen king masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon mustard seeds (Rai)
  • 1/2 teaspoon Cumin seeds (Jeera)
  • 1/2 teaspoon kashmiri red chilly powder
  • 1 teaspoon coriander powder
  • 2 cloves
  • 2-3 whole black pepper
  • 1 star anise or chakr phool (optional)
  • 1 bay leaf
  • 2 cup water
  • Salt as per taste

How to make Tehri:

Step1: To begin making the Tehri, get all the ingredients ready for cooking.Cut the vegetables and keep them ready.Water rice with water and soak it for 10 minutes.Soak nutrela (or soya) chunk in hot water with some salt for 10 minutes.Once the chunks are soaked well and becomes soft, then squeeze out the excess water by pressing in the fist and keep aside.

Now heat oil in a large pan on medium heat. Then add mustard seed, let it crackle then add cumin seed roast it for 20 seconds.Then add clove, star anise, black pepper, bay leaf and saute them for a minute.

Step2: Now add onion and ginger garlic paste and saute it for 3-4 minutes till it turns out golden brown.Once onion is done then add green chilly and tomato and mix every thing well and saute it for another 2-3 minutes till the tomatoes are soft.

Step3: Its the time to add spices, add red chilly powder, coriander powder, garam masala, turmeric powder and salt as per taste and saute it for a minute.Now add chopped potato and cauliflower mix everything well and cook for another couple of minutes.Then add green beans and green peas and cook for 3-4 minutes by closing the lid till all the vegetables are half cooked.

Step4: Once all the veggies are half cooked, open and stir it well and add capsicum and soaked nutrela mix everything well with the masala and add 1/4 cup of water and close the lid and cook for another 3-4 minutes.

Step5: By now all the veggies will be 70% cooked (make sure not to cook much otherwise vegetables will becomes mushy).Its time to add soaked rice, mix everything well and saute it for 2minutes.Then add 2 cups of water to the rice (Note: amount of water will always be double the amount of rice we are taking)

Taste the water it should be salty if you feel you can add salt to adjust to your taste.

Step6: Cover the pan and let it cook for 10-12minutes.After 10minutes check all the water will be absorbed and rice will be cooked.Turn off the flame and let it sit for 3-4 minutes.Tehri is ready to be served.

Add 2 teaspoon ghee and garnish it with fresh coriander leaves.Serve it with onion,Chilly pickle and raita.Enjoy the healthy and tasty Tehri with your family and friends.
