Chatpati Imli Balls is a sweet and sour candy made with tamarind and jaggery as a main ingredients along with some spices. This was my favorite candy when I was a kid, it is a most common in India, available in all grocery shop. This tamarind pulp candy is exceptionally sweet and delicious. Its is very easy and quick to prepare with less ingredients to satisfy any tough, snacking craving. This Imli balls (candy) is made using tamarind paste, jaggery, and some spices and then coated in powdered sugar.

Level: Beginners (Easy) ∏ Measurement: 1 Cup ≡ 250 ml ≡ 250gm
- 1/2 cup seedless ripe tamarind
- 3/4 cup (200) gm Gur (Jaggery)
- Pinch of salt
- 1/4 teaspoon red chilly powder
- 1/4 teaspoon cumin powder
- 2-3 teaspoon powdered sugar
How to make Chatpati Imli Balls:
Step1: Clean the tamarind very well and remove all the unwanted particles and seeds. In a Blender/grinder add tamarind and blend into a coarse mixture.
Step2: Now heat a pan on low-medium flame then add the jaggery and keep breaking large pieces into small parts using the spoon. In a couple of minute jaggery will be melted to a paste, let it boil for a minute. Then add pinch of salt along with cumin powder and red chilly powder. Mix everything well.
Step3: Add coarse tamarind mixture into the melted jaggery paste. Keep stirring it for 2 minutes till it becomes a smooth sticky mixture.Turn off the flame.
Mixture for making tamarind ball is ready. Let it cool for couple of minutes.
Step4: Apply ghee on the palm and take small amount of mixture at a time, make round shape tiny balls then roll it into the powdered sugar and coat it. Keep it on plate to get it cooled. Use same process for remaining mixture and make more balls from it.
(Note: Take care while handling hot mixture, if its too hot let it cool a bit till you are able to bear its heat. Do not cool completely, then you wont be able to make balls.)
Chatpati Imli Balls (Candy) is ready, store it into an airtight container. Enjoy !!
