Aloo Parwal Dry Veg is the simplest yet tasty recipe which can be prepared with only few ingredients available in our kitchen. It tastes good and can be prepared in very less time. It looks similar to Ivy Gourd or Tindora and people often get confused between the two. However both are completely different in taste. Parwal is thicker and longer. Aloo Parwal Dry Veg is one of the easy recipe which you can even carry in your lunch box.
Here is a step by step recipe of this yummy sabzi. I prepared semi dry version of this sabzi using Aloo along with Parwal.
Preparation Time: 10mins ∏ Cooking Time: 20mins ∏ Servings: 2-3
Level: Beginners (Easy) ∏ Measurement: 1 Cup ≡ 250 ml ≡ 250gm
- 250gm parwal or pointed gourd
- 2 medium-size potatoes (Sliced or chopped)
- 1 medium-size onion (sliced)
- 3-4 garlic cloves finely chopped
- 2-3 green chilly chopped in slits
- 1/4 cup finely chopped fresh coriander leaves
- 1/2 teaspoon Haldi (turmeric powder)
- 1 teaspoon jeera
- 1/2 teaspoon red chilly powder
- 1/4 teaspoon jeera powder (optional)
- 1/4 teaspoon amchoor(dry mango) powder (optional)
- Salt as per taste
How to make Aloo parwal dry veg:
Step1: Wash and dry parwal with napkin and remove its both end. Then Chop it in thin slices.
Step2: Now wash, peel and chop potato in thin slices along with onion,garlic,green chilly and coriander leaves. Take all the spices together along with oil
Step3: Turn on flame and heat a pan. Then add oil and let it heat, now add cumin seeds,chopped garlic and green chilly. Fry it for a min on medium flame.
Step4: Now add chopped onion and fry it for 2-3 mins on medium flame till it turns golden brown. Keep stirring in between
Step5: Once onion turns golden brown, add chopped potato and mix well and fry for 2-3 mins till it fries a bit
Step6: Now add chopped parwal and mix it and fry for 2-3 min on medium flame and keep stirring in between.
Step7: Now its time to add spices, reduce the flame to low before adding spices so that it wont burn. Add turmeric powder, red chilly powder,salt. You can also use amchoor (dry mango) powder and jeera powder which is totally optional.Mix everything well.
Step8: Now cover the pan and cook it for 7-8 mins on low flame,keep stirring in between.
Step9: After 7-8 mins it will be almost cooked now turn the flame to medium and stir well and cook it for additional 2-3 mins on medium flame without closing the lid.
Step10: To make aloo parwal veg crispy and more tasty fry it on high flame for 1-2 mins, keep stirring continuously.
Step11: Turn off the flame and Aloo Parwal dry veg is ready to be served with paratha, poori, roti, etc or with dal and rice.
