Its a easy, quick and healthy north Indian style cabbage recipe. This is a home-cooked dry veg made with cabbage and green peas. Cabbage is also called as patta gobhi or bandh gobhi in India. Like most of my recipes this is also lightly spiced sabzi which goes wonderfully with roti if you have some dal tadka on the side is one of our favourite go-to comfort dishes. This is a basic Indian dish that is very tasty! Adjust the spices to your preferences.

Ingredients:
- 250 gm chopped cabbage
- 1/2 cup green (fresh/frozen) peas
- 1 large onion finely chopped
- 1 large tomato chopped in medium sizes
- 1 teaspoon ginger-garlic minced (or paste)
- 2 green chilly chopped
- Coriander leaves-fistful (finely chopped)
- 1/2 teaspoon cumin seed (Jeera)
- 1/2 teaspoon mustard seed
- 1/2 teaspoon turmeric (haldi) powder
- 1 teaspoon red chilly powder
- 1 teaspoon coriander powder
- 1/2 teaspoon dry mango (Amchoor) powder
- 1/2 teaspoon garam masala
- 2-3 teaspoon vegetable oil
- Salt as per taste
How to make Cabbage Dry Veg:
Step1: Turn on flame and heat a pan. Then add oil and let it heat, now add cumin seed and fry it for a 20-30seconds on medium flame. Now add garlic and ginger and saute it for 20-30 seconds till the raw aroma of garlic goes away. Now add chopped onion along with chilly, saute it for 4-5 minutes on low-medium flame till it turns out golden brown.
Step2: Then reduce the flame and add turmeric powder, red chilly powder, coriander powder and salt as per your taste. Saute it for 20-30 seconds on low flame.
Step3: Add green peas, Increase the flame to medium and fry it for 3-4 minutes.
Step 4: Now add cabbage and mix everything well and cover the pan and cook it for 8-10 minutes on low-medium flame. Do not add any water because vegetables cook on their own steam. Keep stirring in between.
Step5: After 10 min, open the lid and check whether cabbage turns soft and cooked almost 80%. Now add chopped tomatoes. Mix everything well and cover and cook it for another 2-3min.
Step6: Once tomatoes turns soft add dry mango (Amchoor) powder and garam masala. Mix everything well and saute it for 1 minute then turn off the flame. Add some fresh coriander.
Cabbage dry veg is ready. Serve it with dal, roti or paratha.
