Step2: In the meanwhile when dal is cooking we will fry the palak.

Turn on flame and heat a pan. Then add oil and let it heat, add mustard seed and let them crackle. Now add cumin seed and fry it for a 10-20seconds on medium flame. Add Hing, red chilly, curry leaves, garlic and ginger and saute it for 20-30 seconds till the raw aroma of garlic goes away. Now add chopped onion, saute it for 4-5 minutes on low-medium flame till it turns out golden brown.

Step4: Once tomatoes are soft, reduce the flame to low. Add 1/2 turmeric powder, chilly powder, garam masala and saute it for 1-2 minutes. Now add finely chopped spinach (palak) and saute it for 3-4 minutes till it becomes soft. (Don’t cover the pan else palak will loose its green colour.)

Step5: In the meanwhile check the dal and using spoon mash it to a smooth paste. When palak is cooked add boiled dal and mix it well. You can add amchoor (Dry mango) powder or lemon juice additionally if you like. Let it boil for 2-3 minutes then turn off the flame.

Palak Dal is ready. Garnish it with fresh coriander leaves. Serve hot with chapati or hot steamed rice topped with a tsp of ghee.
