Paneer Bhurji Gravy

Its been a while since I shared any paneer recipes, so I decided to make this curry and share it with you all. Paneer Bhurji Gravy is a semi gravy dish made with paneer (Indian cottage cheese. The paneer chunks are so flavorful and will surely please everyone’s taste buds. If you have a chunk of paneer in your fridge, you are sorted for the next meal. India and its love for paneer is a well-known one. Enjoy it with naan, paratha or rice.

Level:Intermediate(Medium)  ∏  Measurement: 1 Cup ≡ 250 ml ≡ 250gm

Ingredients:

  • 1.5 cup or 200gm crumbled paneer
  • 1/2 cup (fresh or frozen) green peas
  • 1 medium-size onion chopped
  • 1 large size tomato finely chopped
  • 1-2 green chilies finely chopped
  • 1 teaspoon ginger-garlic paste
  • Coriander leaves -fistful (finely chopped)
  • 1/2 teaspoon cumin seed (Jeera)
  • 1 small piece cinnamon
  • 2 black peppercorn
  • 2 Clove
  • 1-2 green cardamom
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon Kashmiri red chilly powder
  • 1 teaspoon coriander powder
  • 1 teaspoon chickpea flour or besan (optional)
  • 1 teaspoon fresh cream (optional)
  • 1/2 teaspoon garam masala or kitchen king masala
  • 1/2 teaspoon dry fenugreek leaves (Kasuri methi)
  • 1/2 cup water
  • 2-3 teaspoon oil
  • Salt as per taste

How to make Paneer Bhurji Gravy:

Step1: Heat 2 tbsp oil in a pan. Add cumin seed, cloves, black pepper, green cardamom, Cinnamon stick. Let it splutter and Saute till it turns aromatic.

Step2: Add chopped onion and sauté till it becomes pink in color. Cover and cook for 3-4 minutes on medium flame. Onion tastes good when cooked in steam so cover it for a while.

Step3: Now add the ginger-garlic paste along with chopped green chilies. Instead of ginger-garlic paste, you may use freshly grated ginger and garlic. Sauté for a few seconds.

Step4: Once the onion turns light pink in color, add salt and a teaspoon of besan or chickpea flour. Sauté it very well on low-medium flame till the raw flavor of besan is gone. If you are not the fan of that nutty flavor of besan in gravy then you may totally skip adding besan in this dish.

Step5: Once the besan is roasted, add chopped tomato. Mix everything very well and cover the pan for another 2-3 mins.

Step6: Once the tomato turns soft add turmeric, coriander powder, and red chili powder. Mix and cook till oil starts to separate.

Step7: Now add green peas along with 1/2cup water, you can add more as per desired consistency. Cover and cook for 3-4 minutes. At this point add 1teaspoon of fresh cream. And mix everything well. (Here I am using frozen peas which doesn’t require much time to cook. If you are using fresh peas then cook it for additional 5mins or till it become soft)

Step8: Add crumbles paneer and mix everything well. We don’t have to cook the paneer for a longer time.

At last add some dry fenugreek along with garam masala and fresh coriander leaves. Mix everything well and cook for just 1 minute then turn off the flame.

Step10: Your Paneer Bhurji Gravy is ready. Relish with laccha paratha, phulka or plain rice.
