Mix Veg (Dhaba style) recipe is a very popular north Indian dish which has the goodness of a variety of vegetables adding colour, taste and nutrition to your meal.You can find this dish easily in the menu of most Indian restaurants.Here I am sharing a delicious dry Mix vegetable recipe which can be made for some party, festivals or on regular days.Let’s make everyone’s favourite and delicious dry mix veg dhaba style.

Preparation Time: 15mins  ∏  Cooking Time: 35mins  ∏  Servings:3-4 persons

Level:Intermediate(Medium)  ∏  Measurement: 1 Cup ≡ 250 ml ≡ 250gm

Ingredients:

  • 1 large potato chopped in small cubes
  • 1/2 cup cauliflower chopped
  • 1/2 cup green beans chopped
  • 1/4 cup carrot chopped
  • 1/4 cup capsicum chopped
  •  1/4 cup (fresh or frozen) green peas
  • 1 medium size onion chopped (slices)
  • 1 large size tomato finely chopped
  • 1-2 green chillies finely chopped (+2 chilly slits)
  • 2 inch ginger roughly chopped
  • 5-6 garlic cloves
  • Coriander leaves -fistful (finely chopped)
  • 50-60 gram paneer chopped in cubes
  • 6-7 cashew
  • 1/2 teaspoon cumin seed (Jeera)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon kashmiri red chilly powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala or Kitchen king masala
  • 1/2 teaspoon dry mango (amchoor) powder
  • 1/2 teaspoon dry fenugreek leaves (kasuri methi)
  • 4-5 teaspoon oil
  • Salt as per taste

How to make Mix Veg:

Step1: To begin making the Mix veg, get all the ingredients ready for cooking. Cut the vegetables and keep them ready.

Turn on flame and heat a pan. Then add 1 teaspoon oil and let it heat, now add garlic clove, green chilly, chopped ginger, onion and saute it for 1-2 minutes on medium flame.Then add cashew, mix and saute it for 1-2 minutes.

Now add chopped tomatoes and mix.Cook tomatoes for 2 minutes till it turns little soft.Remove it in a plate and let it cool.Then we will grind this mixture in a smooth paste using blender/grinder (without using water,If required you can use 1-2 teaspoon water).

Step2: Heat the same pan on medium flame and add chopped potato, cauliflower, carrot, green beans.Stir and fry the vegetables for 5-6 minutes.Keep stirring in between.

Now add capsicum and green peas, mix everything well and saute it for another 3-4 minutes.Now turn off the flame, remove vegetables on plate and keep it aside.

Step3: Now again heat the pan on low medium flame and saute paneer cubes in 1/2 teaspoon oil or butter.

Step4: Take the cooled onion tomato mixture and now we will grind this mixture in a smooth paste using blender/grinder (without using water,If required you can use 1-2 teaspoon water).

Step5: Turn on flame and heat a pan on medium flame.Then add 2 teaspoon oil and let it heat, now add cumin seed and saute it for 20seconds. Reduce the flame to low and add turmeric powder, red chilly powder and saute it for few seconds.

Now add blended onion tomato paste and saute it for 2-3minutes.Add cumin powder, coriander powder and mix everything well and cover the lid and cook masala for 5-6 minutes on low-medium flame.We have to fry masala till the oil separates from the paste.Keep stirring in between.

 Step6: Open the lid and add green chilly (slits).Now add 200ml water (or as required), stir everything and add fried vegetables along with salt (as per your taste).Cover the pan and cook on low-medium flame for about 8-10minutes till the vegetables are cooked properly.

Step7: Open the lid, add garam masala, amchoor powder and fried paneer cubes.At this time you can add cream and kasuri methi (which is totally optional).Mix everything well and cover the pan and cook it for another 2-3 minutes.

Turn off the heat and transfer the mix veg to a serving platter.Garnish with fresh coriander leaves and butter.Serve with roti, Puri, naan or paratha.
