Pav Bhaji

Pav Bhaji does not require any introduction, it is a very famous street food.It is more than a mere snack, it is a quick meal that can be grabbed for lunch or dinner.Pav bhaji has many variations in ingredients and garnishes, but is essentially a spiced mixture of mashed vegetables in a thick gravy cooked on a flat griddle (tava) served hot with a buttered soft white bread roll.

This recipe consists of lot of green vegetable which makes this recipe tasty, healthy and nutritious all at the same time.You can choose any kind of vegetables as per your liking.Here I will be using pressure cooker to boil all the vegetables together which will reduce the cooking time.

Preparation Time: 10-15mins  ∏  Cooking Time: 20mins  ∏  Servings:2-3 persons

Level:Beginners (Easy)  ∏  Measurement: 1 Cup ≡ 250 ml ≡ 250gm

Ingredients:

  • 2 medium size potato
  • 2 large size tomato finely chopped
  • 1 medium size onion finely chopped
  • 1/2 cup cauliflower florets
  • 1/4 cup green beans chopped
  • 1/4 cup cabbage chopped (optional)
  • 1/4 cup carrot chopped
  • 1/4 cup green peas (fresh or frozen)
  • 1/4 cup bell pepper(Shimla mirch/capsicum) finely chopped
  • 2-3 green chillies finely chopped
  • 1 teaspoon ginger garlic paste (or grated)
  • Coriander leaves -fistful (finely chopped)
  • 1 teaspoon kashmiri red chilly powder
  • 3-4 teaspoon Pav bhaji masala
  • 2-3 teaspoon oil
  • 1-1/2 inch butter cube (or as required)
  • Lemon wedges
  • Salt as per taste

How to make Pav Bhaji:

Step1: To begin making the Pav Bhaji, get all the ingredients ready for cooking. Chop all the vegetables and keep them ready including potato.In a pressure cooker combine chopped potato, cauliflower, cabbage, carrot, green beans, green peas along with 1/4 cup of water and pressure cook it on medium flame for 2-3 whistle.

Step2: In the meanwhile we will heat a flat pan (or tawa) and 2-3 teaspoon oil along with 2 teaspoon butter.Then add chopped green chilly and ginger garlic paste (or grated).Saute it for 1 minute.

Then add finely chopped onion, mix it well and saute it for 3-4 minutes till it becomes golden brown in colour.

Step3:  Then add finely chopped capsicum and saute it for 2-3 minutes.Now reduce the flame to low and add red chilly powder, pav bhaji masala and salt as per your taste.Mix everything well and saute masala for 1 minute on low flame.

Step4: Now add finely chopped tomatoes, mix it well and now let it cook for 5-6 minutes on low-medium flame.Keep stirring in between.

Once tomatoes are soft with the help of masher or with the spoon mash tomatoes to make smooth paste.

Step5: Till now pressure of the cooker will be released and vegetables will be boiled perfectly. With the help of cooking spoon (or masher) mash all the boiled veggies to a smooth paste.Now add them to the tomato paste, mix it well.

Step6: Keep mashing all the veggies and tomato to make a smooth paste.If you like more chilly and pav bhaji masala you can add at this time.You an adjust salt as per your taste.Then add 1/4 cup of water and soften everything well.This tends to dry easily specially if you have made it earlier and kept so make sure to add enough water.

Step7: Cook it for another 2-3 minutes and keep stirring in between. Now add butter and fresh chopped coriander leaves.Pav bhaji is ready, remove it to a bowl. Now in the same pan add some butter and heat it ,now warm the pav from both sides.

Pav bhaji is ready to be served with finely chopped onion and lemon wedges.If you want more butter you can top the bhaji with it as this recipe is all about the butter. Enjoy..!!
