How to make Air Fried Stuffed Mushrooms:

Step1: Gently wash the mushrooms to clean all the dirt then drain all water and pat dry with paper towels.

Step2: Carefully remove the stem from mushrooms by lightly pushing it away from it without breaking the cap. Using spoon, scoop out some mushrooms to make some more space for the filling.

Step3: Same way do it for all the mushrooms. Do not discard the stem we will use them in filling. Chop all the stem into very fine pieces.

Step4: Heat a frying pan and add butter or oil, then add finely chopped ginger and garlic and saute it for 20-30 seconds till the raw aroma of garlic goes away.

Step5: Now add finely chopped onion, saute it for 2-3 minutes on medium flame till it turns soft. Do not brown them.

Step6: Add finely chopped tomato, red and green bell peppers along with some salt, turmeric powder, black pepper, red chilly powder and Italian seasoning to taste. Mix everything well and let it cook for 2-3 mins on medium flame.

Step7: Now add finely chopped mushroom, mix everything well, and cook for 2 minutes. Turn off the flame.

Step8: Add half of the mozzarella cheese along with some sharp cheddar cheese. Stir until cheese binds to the mixture. Stuffing is ready. You may choose any kind of cheese you like.

Step9: While the stuffing is getting cool, brush little melted butter or oil on top of the mushroom head. Alternatively, you may spray some cooking oil.

Step10: Divide the stuffing into equal parts. Using small spoon stuff each mushroom with the stuffing by pressing it into the cavity. Same way prepare all the mushrooms.

Step11: Top it with remaining cheese. Sprinkle some black pepper and Italian seasoning.

Step12: Arrange them in the air fryer basket. Set the temp to 400Deg F and cook them until they are lightly browned for about 6-8 minutes.

Step13: Once done, take them out and let it sit for couple of minutes before serving.

Step14: If you are left with some stuffing you may use them to make these little bread-mushroom bites. Cut bread into circles add some butter, apply some pizza sauce and top it with remaining stuffing.

Step15: Top it with grated cheese and cook them for 6-7 minutes at 400Deg F.

Step16: Serve Stuffed Mushrooms warm with choice of your dressing and drink. Enjoy!

Tips:

  • The best mushrooms for this recipe are medium-sized white button mushrooms. Try not to buy very small mushrooms, because they are harder to stuff.
  • Place mushrooms at some distance in the basket so that they cook from all sides.
  • I didn’t preheat the air fryer. I just put my mushrooms into the basket, set the timer for 6-8 minutes, and the temperature to 400 Deg F. They came out perfectly cooked and delicious.
  • If you have a small air fryer you may need to cook this recipe in batches.
  • You want them to be nice and golden brown and lovely.
  • If cooking in multiple batches, the first batch will take longer to cook if Air Fryer is not already pre-heated. Recipe timing is based on a non-preheated air fryer.
