Veg Lasagna Poppers are my recent creation. These Veg Lasagna Poppers are stuffed with the onion, bell peppers, mushrooms, spinach, and mozzarella cheese and covered in flour, egg, and bread-crums. You may add veggies of your choice and make them more healthy. Cooking them in the air fryer is so easy, quick and so delectable, they turn out so good but you may also deep-fry them.
Whenever I make lasagna I was always left with few extra sheets in my pasta box. I was not getting time to make traditional lasagna and somehow I have to use these sheets to make snacks for my kid so I thought of making these lasagna roll-ups. I always find a way or the other to feed more veggies to my toddler son. You can actually do a lot more with lasagna noodles than you might think even without making actual lasagna. It is also a super-easy way to re-use boiled sheets that were left out of dinner from the night before.
You may also make them using flour tortillas, Follow the same recipe, and replace the Lasagna sheet with the soft flour tortillas. I have posted the pics for making Veg tortillas poppers below.
When you need a creative appetizer that’s both filling and fun, try this unique Italian style bite-size treat. It will taste like the traditional lasagna with a twist of the crunchy outer layer.

How to make Veg Lasagna Poppers:
Step1: Heat a frying pan and add butter, then add minced garlic and saute it for 20-30 seconds till the raw aroma of garlic goes away.
Step2: Now add chopped onion, saute it for 3-4 minutes on low-medium flame till it turns out golden brown.
Step3: Add finely chopped veggies of your choice (carrot, mushroom, broccoli, red and green bell peppers) along with some salt, pepper and Italian seasoning to taste. Mix everything well and let it cook for 3-4 mins.
Step4: Add finely chopped spinach and mix everything well saute it for 1 min.
Step5: Once the spinach leaves become soft add pizza or marinara sauce and mix everything well. Taste and adjust the seasoning.
Step6: Turn off the flame and let the mix sit for 5 min then add shredded mozzarella cheese. Stir until mozzarella binds to the mixture. Stuffing is ready. You may also combine ricotta and mozzarella cheese.
Step7: While mixture cools boil 4-5 cups of water in a medium pot and add lasagna noodles, lay them in across each other in a star formation so they do not bind together, stir regularly.
Step8: After 8 to 10 minutes drain pasta and allow to cool for five minutes.
Step9: Cut noodles down into half (or 3- to 4-inch slices) and place mixture inside and roll them tightly. Similarly, fill and roll all the sheets.
Step10: Place poppers in the freezer for 10-15minutes.
Step11: In the meanwhile prepare for coating. In a bowl take mix all-purpose flour along with salt and black pepper. In another bowl whisk 2eggs and add some salt and pepper. In 3rd bowl take breadcrumbs.
Step12: Dip poppers in flour, egg wash, and bread crumbs, then once more in the egg wash and bread crumbs.
Step13: Freeze for an additional 15 minutes. The longer you freeze the better so that filling really stays in the roll. It’s really important you freeze after stuffing.
Step14: For frying, Place poppers in the basket and coat them with oil and set temp to 400Deg F. Cook them for 10mins or till they are nicely browned and crunch. Cook the veg lasagna poppers in batches and it’ll be over before you know it.
Alternatively, you may deep fry them on medium heat in a pan for 15 minutes or bake them at 400Deg F for 12-15 mins.
Step15: Crispy, Crunchy, Cheesy Veg Lasagna Poppers are ready. Serve warm with Ketchup, ranch sauce, or your choice of dressing. And since the crunchy golden rolls are so dunkable, why bother with forks and knives? Enjoy!
How to make Veg Tortillas Poppers:
Step1: Cut strips of Flour Tortillas and place mixture (for stuffing refer Step 1) inside and roll them tightly. Similarly, fill and roll all the strips.
Step2: Place Tortilla poppers in the freezer for 10-15minutes.
Step3: In the meanwhile prepare for coating. In a bowl take mix all-purpose flour along with salt and black pepper. In another bowl whisk 2eggs and add some salt and pepper. In 3rd bowl take breadcrumbs.
Step4: Dip poppers in flour, egg wash, and bread crumbs.
Step5: Freeze for an additional 15 minutes. The longer you freeze the better so that filling really stays in the roll. It’s really important you freeze after stuffing.
Step6: Now fry them in air-fryer at 400Deg F for 10 mins (For details follow above step of lasagna poppers: Step14). Serve hot and enjoy!

Tips:
- It’s really important you freeze after stuffing, recommend freezing it for an hour, so filling really stays in the rolls.
- Make sure the stuffing is dry, otherwise it will come out while filling.
- You can get creative with the filling, can use shells or tubes instead of lasagna.
- To make sure the poppers won’t come off during frying, use a baking sheet to wrap the poppers and twisted the ends of the paper to help the poppers stay in place and keep them intact then freeze them.
- To may mix ricotta and mozzarella cheese together and put that inside along with the sauce.
- You may add some parmesan after frying.
