Vegetable Raita is a healthy yogurt-based recipe made from yogurt/curd, cucumber, grapes, onion, tomato which is flavored with roasted coriander seed powder and chat masala. There are so many recipes for making raita using different ingredients. Vegetable Raita is one of the commonly made raita in Indian homes. The most common as well as popular are Lauki raita, Onion-Tomato, Beetroot Raita, Cucumber raita, and Boondi raita. Making raita is very easy and quick. just chop some vegetables or fruits and add them to the yogurt along with seasoning. There is no specific measurement for making raita just add the veggies as per your choice and your healthy, colorful mixed veg raita is ready.

The Vegetable Raita makes a perfect accompaniment to be served along with Parathas, Chicken Dum Biryani, Theplas, or as a side dish for the weekday dinner.

How to make Vegetable Raita:

Step1: Take a  large mixing bowl, add curd/yogurt into it. With the help of whisk beat until it becomes smooth and creamy.

Step2: Now add water, ginger, chilly, sugar, roasted coriander powder, chat masala. Add regular salt or black salt as required and mix well.
Step3: Now add chopped cucumber, onion, tomato, grapes, pomegranate seed, fresh coriander, mint leaves. Mix all the ingredients well using whisk or spoon. You may add veggies of your choice such as carrot, beetroot, bell pepper etc.

Step4: Check the taste and add more of the spice powders or salt if required. Refrigerate for 30mins or serve immediately.

Serve raita with any rice pulao, biryani or paratha of your choice.

  • Use thick or greek yogurt. Kids love to eat thick creamy yogurt, make sure to add more sugar for them and avoid chilly.

  • If using beetroot and carrot make sure to chop them finely.
