How to make Masala Corn Chaat:
Step1: Remove the husks of the corn and clean the stalk’s tassels. Break them in parts are per your convenience. Boil around 2 cups of water in a large pan. Then add the corn and let them boil for around 5 minutes or until the sweet corn kernels have softened.
Step2: Once the corn kernels are cooked and softened remove them from the pan/steamer and place them on a plate to cool down a bit. Then remove the corn kernels with a knife or fingers. (Tip: To remove corn kernels easily, first just remove on row. Then remove the other kernels by pressing left to right (horizontally) you will find that it to easy and fast way to remove the kernels.)
Step3: Remove all the kernels in the same way. Make sure that the corn kernels are not cooled down completely. Skip this step if you have used corn kernels.
Step4: Transfer corn kernels to a mixing bowl. Add finely chopped onion, tomato, green chili, and fresh coriander leaves.
Step5: Now add 1 teaspoon Schezwan sauce, 1/4 teaspoon red chili powder, 1 teaspoon chaat masala powder, 1/2 teaspoon butter. Sprinkle some salt and pepper as per taste.
Step6: Add lemon juice and mix everything well. Taste and adjust the spices as per the taste.
Step7: Garnish with some grated cheese and sev.
Tips:
- Try to serve Chaat immediately and top it with more cheese, sev, lemon juice and coriander leaves if required.
- While boiling corn make sure it’s cooked properly and is soft.
- Instead of fresh corn, you may also use tinned corn kernels. However fresh corn tastes best.
