These Spicy Crispy Baby Corn Fritters / Pakoda’s are my favorite snack to make any time. Just a few ingredients from the pantry are enough to make this crispy, spicy and tasty golden fried baby corn fritters within 20 minutes.

Baby Corn Fritters are made by deep-frying the baby corns dipped in flour and spices batter. Just make the batter and whenever you are ready to eat just dip and fry. It is the simplest and non-fussy starter ever.

Recently we went for the corn picking with my kid where we have learned that these miniature sizes of baby corn are nothing but the immature ears from the regular-sized plant. I always thought that this baby corn grows in the dwarf corn plants. I was wrong, thanks to the field trip where we have learned a lot about growing and harvesting corn.

Shopping at the farmers market, not only gives us access to the best tasting produce that is in season, picked at its peak of flavor, with the shortest amount of travel time between the farm and you but it gives us most importantly, connection. Nothing can beat cooking fresh veggies directly from the farm.

They are supreme in magnesium, vitamin A, iron, and phosphorous. Along with it in contrast to fully developed corns, they have minimum starch content which makes it light and healthy. The baby corn is not only rich in fiber but also stimulates digestion and cure anemia which is one of the most commonly found conditions in a middle-aged woman

Everyone young and old just loves these fritters. Its the perfect monsoon snack to be served with ginger tea. Serve the fritters as tea time snack or party starters with some dip of your choice. You cannot stop at one. seconds and thirds are sure. They are just so addictive.

How to make Baby Corn Fritters:

Step1:  Peel and remove the corners. I like to chop the baby corn into 4 pieces to make them bite-size.

Step2: If you are using fresh baby corn, then we need to soften them a little before frying, hence need to boil them in 4 cups of water for 4-5 minutes on medium-high flame.

Step3: Drain them on a strainer and let it cool down a bit.

Step4: Once they are cooled. Transfer them to a large bowl and season it with some red chili powder, salt, and lemon juice. Keep them aside in the meanwhile we will prepare the batter.

Step5: In a large bowl add all the ingredient except oil, 1/2 cup all-purpose flour, 1 tablespoon rice flour, 2 tablespoon cornflour, 1/2 teaspoon ginger-garlic paste, 1/4 teaspoon chili flakes, 1/4 teaspoon Kashmiri red chili powder, 1/4 teaspoon cumin powder, 1/4 teaspoon turmeric powder, 1/4 teaspoon coriander powder. Add some black pepper powder and salt as per your taste. Mix everything.

Step6: Now add little water at a time and whisk well into a smooth batter. The batter should not be very thin, it should be in pouring consistency.

Step7: Add 2-3 par-boiled baby corn at a time to the batter and coat from all sides.

Step8: Heat oil as required in a pan. Check the oil temperature by adding one piece of baby corn. It should gradually come on top then add more baby corn.

Step9: Deep fry them on the medium flame until golden brown from all sides. 

Step10: Once they turn crispy and golden brown remove them on an absorbent paper. Continue to fry this way in batches.

Step11: Serve the Baby Corn Fritters hot with dip of your choice.

Tips:

  • You can reduce or increase the seasonings and sauces as per your taste preferences.
  • If you are making them for kids then reduce the red chili powder or totally skip it.
  • Instead of deep-frying, you may shallow fry or Air fry baby corn. Even you may bake them in the oven.
  • If you want to air-fry them then cook them at 375Deg F for 8-10 mins.
  • While Air-frying them, try to shake the basket every 5mins so that they are cooked evenly from all sides.
  • You can coat these fritters in fresh bread crumbs to make them crisper.
  • You may also double fry them to make it crispy.
