Garlic Fried Rice

Garlic Fried Rice is an Indo-Chinese recipe, which is perfect meal for weekend. Fried rice is a great way to use up leftovers rice. The great thing about this recipe is that you can add whatever you would like. I always serve this amazing fried rice with all of my Chinese dishes. It is easy and goes perfectly as a side. I could probably eat an entire bowl. Feel free to add in chicken or veggies, or any other proteins you like as well.

  • 1 Cup (250 gm) rice
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped carrot
  • 1/4 cup finely chopped red- green capsicum
  • 1/4 cup finely chopped green beans
  • Fistful fresh spring onion (white+green separated)
  • 7-8 garlic clove
  • 2-3 green chilly chopped (slits)
  • 2 whole dry red chilly
  • 1 teaspoon vinegar
  • 1 teaspoon soya sauce
  • 1-2 teaspoon vegetable oil
  • 1/4 teaspoon sugar (optional)
  • Salt as per taste


How to make Garlic Fried Rice:

Step1: Wash the rice thoroughly and add in a large pan with 2-1/2 cup of water and let it boil and cook on medium flame as we normally prepare rice. We have to cook this rice till its 90% done (it takes around 7-8 minutes). Then strain the excess water from rice in the colander and keep it aside. Do not overcook rice otherwise fried rice will be mushy. You can even use the left over rice for making fried rice.


Step2: In the meanwhile when rice is cooking we can chop the vegetables and keep them ready and can prepare the garlic chilly mixture. Add garlic clove and whole red chilly in a grinder or chopped and make a course mixture. You can even use mortar pestle to make the course mixture.

Step3: Turn on flame and heat a thick bottom pan. Then add 1-2 teaspoon oil and let it heat. Increase the flame to medium-high and add Garlic-Chilly crushed mixture and saute it for 10 sec till the raw aroma goes away. Add onion and saute it for 2-3 minutes. Then add chopped carrot and green beans, mix and saute it for 1 minutes.

(Note: We have to saute everything on medium-high or high flame.)

Step4: Add green/red bell pepper (capsicum) along with spring onion white and saute it for 1 minutes.

Step5: Now keeping the flame to medium-high add soya sauce, vinegar and some salt as per your taste. Mix everything well and saute for 1 minute.

Step6: Now add cooked rice and mix it well with all the veggies. Taste salt and soya sauce, add if required. Saute everything for 2 minutes on high flame then turn off the flame. Keep the lid closed for 5 minutes so that all the aroma is blended well with the rice.

Step7: Garlic Fried Rice is ready. Garnish it with fresh spring onion greens. Serve it alone or with manchurian.
