How to make Lemon Coriander Soup:
Step1: To begin making the Lemon Coriander Soup Recipe, keep all the ingredients ready. In a saucepan, heat oil on medium flame, add ginger and garlic and saute for a couple of minutes.
Step2: Next add veggies of your choice. Here I have added finely chopped cabbage, carrot, sweet corn and green beans. Saute them on medium-high flame for 2-3 minutes. Keep stirring in between.
Step3: Now add spring onion greens. Adding spring onion in the soup is optional.
Step4: Add black pepper and salt to taste. Then add 3 cups of water. You can also use vegetable stocks instead of water.
Step5: Bring the soup to a rolling boil for around 10 mins.
Step6: In a small mixing bowl, combine the corn flour along with 2-3 tablespoon of water until there are no lumps.
Step7: Add corn flour mixture to the soup and let it boil for 5 minutes.
Step8: Finally, once the lemon coriander soup has come to a boil, turn off the flame and add hand full of fresh chopped coriander leaves.
Step9: Add around 2 teaspoon of lemon juice. Adjust the amount of lemon juice as per your taste. Mix well.
Step10: Lemon Coriander soup is ready. Serve it piping hot. Enjoy it as it is or along with Veg spring rolls, Gobi Manchurian, Veg sizzler, Mushroom fried rice or with toasted bread.
- Always use fresh vegetables for making soup.
- Serve it hot with the choice of your meal.
- Add fresh coriander and lemon juice right before serving it. If you will add lemon juice well in advance then the soup will not taste good.
