Veg Sizzler or Vegetable sizzler recipe is one of the most loving dish in India. This recipe has grilled paneer cubes along with stir-fried vegetables and a spicy sauce that is rich in the chili-garlic flavor and served with fried baby mushroom and french fries. Adding noodles or fried rice to the sizzler makes this dish a complete meal by itself. Adding loads of seasonal vegetables makes this a wholesome and nutritious dish.

This popular restaurant food is a fusion recipe from Indo Chinese cuisine. It’s also known as Chinese sizzler, Veg Shashlik Chinese Sizzler, Paneer sizzler. We are usually scared of making this at home because we think it has lots of work to do. But believe me, if you have a bowl of leftover rice then this easy recipe comes together in just 30 minutes. It is a great way to use up leftovers rice. Most of the time goes in chopping the veggies, so if you have chopper at home then lot of time and effort can be saved.

The great thing about this Veg Sizzler recipe is that you can add whatever you want like any kind of veggies, or paneer, or any other proteins that is easily available in your kitchen and you can enjoy this tempting hot sizzler at home. The sizzler is served on a hot sizzling plate with a smoky and aromatic sizzling taste. You may add variations to this recipe in a number of ways, you just need a sizzler plate and that’s it.

Adding crispy fried baby corn will add a crunchy texture to the sizzler. I also like to serve crispy fried noodles and french fries with the sizzler. For that I have air-fryer the boiled noodles with very little oil at 400Deg F for 8-10 minutes. You may deep fry them if you want.

Serve the Veg Sizzler With Rice, crispy baby corn, fried noodles and french fries as a one-dish meal for a weeknight dinner or even as a main course dish for dinner parties.

How to make Veg Sizzler:

Make the rice

Step1: Drizzle the 1 tablespoon of oil in the pan/wok over medium-high heat. Add the chopped garlic and saute it for about 1 minute or till the raw smell goes away. Then add the onions and cook them for about 2 minutes, stirring constantly.

Step2: Add the mixed vegetables (green beans, red & green capsicum and carrot) and cook for 2 minutes. (Note: We have to saute everything on medium-high or high flame.)

Step3: Season it with salt and black pepper as per your taste. You may also add red chili flakes or chopped green chilies if you like.

Step4: Add the cooked rice into the pan or wok and cook for a few minutes, until the rice is heated through. If you have large clumps of rice, break them apart with the back of your spoon. Stir-fry by mixing well making sure rice grains won’t break. Rice is ready. Keep it aside.

Make the Stir-Fried Vegetables

Step5: Again heat a pan over medium-high heat. Drizzle the 1 tablespoon of oil and let it heat. Then add onion, red and green capsicum (bell pepper) and stir fry on high heat for 2-3 minutes.

Step6: Now add 1/2 cup broccoli blanched, 4-5 mushrooms sliced, 1/2 zucchini sliced, 1/4 cup carrot julienned, 6-7 french beans blanched.

Step7: Saute all the vegetables on medium-high flames for 2-3 minutes or until the veggies have turned lightly tender. Then season it with salt and black pepper as per your taste. Add 1 tablespoon red chili sauce. Mix well. Turn off the flame and keep it aside.

Step8: Grease the sizzler pan or normal pan with butter, add paneer cubes. Using a brush apply some butter/oil around the paneer. And let it grill on low-medium flame.

Step9: After 3-4 minutes flip the paneer cubes. Cook until they are brown and crispy from both sides then transfer to a plate. Keep aside.

Make the Sauce

Step10: In a small bowl take 1 tablespoon cornflour (corn starch) and add 2 tablespoon water and mix very well to form a smooth paste. Keep aside.

Step11: Pour some oil in a hot pan. Add finely chopped garlic and ginger. Saute it for 1-2 minutes till the garlic is light brown.

Step12: Add 2 chopped green chilis and 2 tablespoons finely chopped spring onion (white and green part). Saute it for 1 minute.

Step13: Reduce the flame and add 1 tablespoon green chili sauce, 1.5 tablespoon soya sauce, 1 tablespoon tomato ketchup, 2 tablespoon schezwan sauce. Mix well.

Step14: Add the cornflour+water slurry into the soya sauce mixture along with 1 tablespoon white vinegar. Mix it well. Increase the flame to medium and add 1 cup of water. For a thick gravy or sauce, you can add less water.

Step15: Season it with salt and black pepper to taste. Mix well. (Add salt keeping in mind that the soya sauce will also have salt in it).

Step16: Simmer it and let it cook till the sauce is thick it will take around 3-4 minutes. Once done turn off the flame and keep aside.

Assemble the sizzler

Step17: The final step is to prepare the sizzler tray. Heat the sizzler plate for about 4-5mins. It has to extremely hot. Reduce the flame to low and grease the sizzler pan with butter. Line the pan with cabbage leaves.

Step18: Place the prepared rice, stir-fried vegetables, fried baby-corns and grilled paneer cubes on the hot sizzling plate.

Step19: Pour the sauce over it and sprinkle some spring onions on it. Switch off the gas and add a 1/2 teaspoon of melted butter on the sides of the pan and this will help it to sizzle. Carefully lift the sizzler pan and place it on the wooden board (part of the sizzler pan) and serve it with french fries, crispy fried noodles, and baby corn.

Tips:

  • You can reduce or increase the seasonings and sauces as per your taste preferences.
  • Since frying is done on high flame so we need to continuously stir the vegetables otherwise they may burn.
  • You can sprinkle some water on the plates to give it a sizzling effect as well.
  • You can replace paneer with tofu to make it vegan.
  • Consistency of the sauce is a matter of preference. Some like it thinner. I prefer mine to be slightly on the thicker side. Adjust the amount of water as per requirement.
  • Cold rice or day-old rice is best. This helps to prevent and keep the rice from sticking together and getting mushy. It does not have to be cold, but it is best to have day-old rice instead of fresh rice.
  • Rice and vegetables must be fried on high flame. That will give the smoky flavor to it.
