Soya Kathi Roll recipe is a delicious lip smacking dish where chatpata masaledar soya chunks/soya nuggets is cooked with crunchy onions, capsicum, cabbage and carrot juliennes along with sauces and spices then rolled in crispy paratha to make a wrap.

Finding new twists for your regular lunch/tiffin recipes seems like a challenging task. This Soya Kathi Roll recipe is packed with protein and veggies. A very popular grab-and-go food, Kathi roll makes a good lunch idea as the rolls can be individually wrapped.

The best part about the Soya Kathi rolls is that you can make it with your regular pantry ingredients. To cut down a bit of my work, I usually use the ready made whole wheat paratha or tortillas that are easily available at grocery stores. In this recipe I am using ready made spinach tortilla.

Soya Kathi roll which not only delicious to eat but it’s very healthy also. Soya, as we all know is a rich source of protein. Including soya chunks/soya nuggets is one of the ways to add protein to our diet.

Once your parathas are ready this dish can be put together real quick. Serve it as a high tea or as an evening snack or even as dinner. These visually delightful Soya rolls pack in so many complex flavors and freshness in every bite, I bet this will be a repeat on your dinner menu.

Soya chunks/nuggets expands pretty well when soaked, almost doubling in size, making them a cheaper and healthier alternative to meat. My son loves to munch on the buttery soya nuggets with a sprinkle of chat masala and salt.

This roll can be eaten as is or served along with Green chutney , Tomato ketchup or Chilli sauce if you want to up the heat and flavors.

How to make Soya Kathi Roll:

Make Stuffing

Step1: In a deep pan add 2-3 cup of water and let it boil on medium-high flame. Add around 1 teaspoon salt mix it, then add 1 cup dry soya chunks/nuggets.

Step2: After boiling for 2-3 minutes, turn off the flame. Let it cool down to room temperature or until its comfortable enough to touch with hands.

Step3: Drain the excess water and squeeze out the extra liquid from the soya chunks by pressing between finger or fist.

Step4: Heat 1-2 tablespoon the oil in a pan over medium-high heat. Add the chopped garlic and saute it for 30 seconds, stirring constantly.

Step5: Now add sliced onion and saute for 2 minutes on medium-high flame. Do not brown the onions. Then add 1 teaspoon ginger garlic paste. Saute for 30 seconds.

Step6: Furthermore, add sliced capsicum, shredded cabbage and carrot jullienne. I have used red and green capsicum, however, you may use any color of your choice. Saute lightly for 1-2 minutes on medium-high flame.

Step7: Now its time to add the seasoning, add 1/2 teaspoon Kashmiri red chili powder, 1/2 teaspoon tandoori masala,1/2 teaspoon chaat masala along with 1 tablespoon tomato ketchup, 1 teaspoon red chili sauce and salt to taste. (Add salt keeping in mind that the soya sauce will also have salt in it and we have also added some salt in the soya chunks while boiling).

Step8: Add 1/2 teaspoon vinegar, 1 tablespoon dark soy sauce, 1/2 teaspoon sugar (optional). Mix well.

Step9: Add squeezed soya and mix well with the veggies and sauces.

Step10: Cook for 2-3 minutes on medium-high so that it will absorb all the flavors of spices. Add some chopped spring onion greens. Turn off the flame and let it cool down to room temperature.

Assemble Soya Kathi Roll

Step11: Heat paratha on hot griddle or tawa until warm. Apply some butter on both sides. Transfer it on a plate and put some tomato ketchup and mayonnaise in the middle and evenly spread over it.

Step12: In a separate bowl take sliced onion, sprinkle some salt, chili powder, chaat masala and squeeze some lemon juice. Mix well and keep aside. Now place the soya chunks stuffing in the center along with some sliced onions.

Step13: Fold the paratha to make a roll. You can use small toothpicks to hold them together or secure with foil on one end to ensure there is no spillage while eating. In this recipe I have used whole wheat spinach tortilla, you can also use ready made or home made paratha.

Step14: Cut them in half using a sharp knife. Serve Soya Kathi Roll with sliced onion, chutney, or tomato ketchup. Enjoy!

Tips:

  • Do not overcook veggies and soya chunks, saute them on medium-high flame only for 2-3 minutes.
  • Adjust spices as per your taste and preference.
