Momos chutney is the spicy chutney made with tomatoes, garlic and red chilies. The heat and pungency of the chutney can be adjusted as per your taste preference. My husband like more chillies so sometimes I also add green chillies while grinding. The colour of the chutney can vary depending upon the type of red chilly you are using.

Level: Beginners (Easy) ∏ Measurement: 1 Cup ≡ 250 ml ≡ 250gm
Ingredients:
- 2-3 medium size tomato
- 10-12 whole red chilly
- 4-5 soaked almonds (Optional)
- 1 inch finely chopped ginger
- 3-4 cloves garlic finely chopped
- 1/4 teaspoon sugar
- Salt as per taste
- 1 teaspoon oil
How to make Momos Chutney:
Step1: Soak whole red chilly in warm water for 15 minutes. In a pan add whole tomatoes with water (tomatoes should be immersed in it). Let it boil on medium-high flame for 7-8 minutes till the outer layer of tomatoes are soft and peel is coming out.
Step2: Once peel is soft add soaked red chilly and and let it boil for 2-3 minutes. Then turn off the flame and remove tomatoes in a strainer and let it cool. When the tomatoes are warm and easy to handle it then remove the outer peel along with top eye part.
Step3: In a Blender/grinder combine boiled tomato, soaked almond (used for thickness) and red chilly (At this time you can also add some green chilly to increase the heat of the chutney). Without using water blend it to a smooth paste. You can also serve this chutney right away with momos after adding sugar & salt but I like it more with some fried ginger and garlic.
Step4: Add a teaspoon oil in a heated pan, then add finely chopped ginger and garlic and saute it for 1-2 minutes on low-medium flame till the raw aroma goes away. Then add tomato-chilly paste and let it cook for 2 minutes on low-medium flame.
Step5: Then add sugar, kashmiri red chilly powder (for colour) along with salt as per your taste.
Remove momos chutney in a bowl and serve it with any kind of momos. You can also store this in fridge for a week.
