This is the quick and easy recipe of Potato filling for Masala Dosa. If you wish to make a masala dosa (a stuffed dosa), make this stuffing first. Potato filling is must to have with any dosa especially with Masala dosa. Aloo masala is what makes a masala dosa really special and delicious. One bite of the dosa along with this scrumptious soft potato stuffing is such a perfect balance of flavours and textures. The Aloo Masala can be rolled in the dosa or served as a side dish.

Ingredients:

  • 2 medium size boiled potato(Aloo)
  • 1 small onion chopped in slices
  • 1-2 green chillies finely chopped
  • 1/2 inch grated ginger
  • Coriander leaves – fistful (finely chopped)
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds (optional)
  • 1/2 teaspoon dry urad dal
  • A pinch of Asafoetida (Hing)
  • 1/2 teaspoon red chilly powder
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon lemon juice
  • 7-8 curry leaves
  • Salt as per taste
  • 2-3 teaspoon oil
  • 1/4 cup water

How to make Potato filling:

Step1: Wash and pressure cook potatoes for 2 whistles or until soft. Peel the potatoes
and with the fingers break them into small pieces or chop them in small cubes.

Add 1-2 teaspoon oil in a heated pan, then add mustard seed and let them crackle. Keep the flame to low-medium and add hing, urad dal and saute it for a while.

Step2: Now add grated ginger and curry leaves. Saute them for 10 seconds. Add onion and chilly, saute it for 3-4 minutes till it turns out translucent. Add salt as per your taste.(Adding salt at the beginning will reduce the cooking time).

Step3: Add turmeric powder, chilly powder and boiled potato. Mix everything well with masala and saute for 2-3 minutes on medium flame.

Step4: Add 1/4 cup of water, mix every together cover the pan and cook on low heat for 6-8 minutes, keep stirring periodically.

Step5: Add lemon juice and cilantro. Once potatoes are cooked turn the stove off. The potatoes should be slightly moist and not very dry.

Potato filling for masala dosa is ready. You can also serve this with uttapam, puri or chapati.
