Nutella Pancake Snow Bomb is a very, very, simple recipe that you can make using very few ingredients. You simply need to take some whole wheat flour (obviously because its much more healthy as compared to all-purpose flour), milk, vanilla extract, Nutella, sugar, baking powder and that’s it. And yes, don’t worry if you are out of Nutella, you can use peanut butter, cinnamon, choco-chips, cream cheese or melted chocolate instead. Seriously, add whatever you want and make the best breakfast treat ever.

Making these little pancake treats are so easy and quick and is filled with delicious fillings. It is an ideal morning breakfast or evening snacks recipe that can be made within 10-15 mins. Note:

You will need a paniyaram or appe pan to make these. This cast-iron or nonstick pan has individual rounded holes to cook the batter in round shapes, making it ideal for pancakes such as these. These pans can be easily found online or at stores.

How to make Nutella Pancake Snow Bomb:

Step1: If you don’t have buttermilk, then pour 1/2 cup milk in a bowl and add around 1/2 tablespoon white vineger. Mix this well and cover and keep aside for 5 min.

Step2: In a bowl add wheat flour, sugar, baking powder, and baking soda. Using a fork or whisk combine them well. Alternatively, you may shift them together using a large strainer.

Step3: Now add the milk-vinegar mixture or (buttermilk) into the flour. Add milk in batches, mix everything together. Then add vanilla extract.

Step4: Keep adding milk as required 1-2 tablespoon at a time. Using whisk or fork, mix everything until it combines well. There should be no lumps into the batter. Be careful not to overmix here. The batter should be slightly thick as shown below but runny. Let the batter sit for 5 minutes before making bombs.

Step5: Heat the paniyaram skillet over medium-high heat. In the meanwhile microwave Nutella for just 15 seconds, to get it to a smooth consistency. Then pour some butter/oil into the molds. Now fill the cavities half with batter. (Do not overfill them).

Step6: Quickly using a spoon or piping bag pour Nutella (or chocolate) in the middle of each pancake. Try to pour them in the centre.

Step7: Now pour more batter over this to cover the surface. Make sure to cover chocolate from all sides.

Step8: Once you have filled the holes immediately cover the pan with the lid and reduce the heat to low-medium, let it cook for 2-3 minutes on one side. Then gently using a toothpick or wooden stick carefully turn them upside down. Let the other side cook for 2-3 minutes until the pancakes are golden brown.

Step9: Once done take them out and let it sit for a couple of minutes.

Step10: Sprinkle with powdered sugar. Serve these warm.

Tips:

  • Cook on low flame, else they will not get cooked from inside.
  • Do not overmilk the batter.
  • Use milk kept at room temperature.
  • Let the batter rest for at least 5 minutes.
  • If vinegar is not available you may also use lemon juice to make the buttermilk out of milk.
  • Try to use a wooden stick or toothpick to turn them to avoid scratching the pan.
