Capsicum Dry Veg or Shimla Mirch Dry Veg or Capsicum Onion Tomato Sabzi or Chatpata Shimla Mirch Sabzi is a spicy and tangy dry veg recipe made with Capsicum, onion, tomato, and basic spices.
Capsicum is also known as Bell pepper or Shimla Mirch. It is a simple, easy, and tasty recipe made with minimal ingredients, you just need 15-20 minutes to make this recipe. This Shimla Mirch Dry Veg goes very well with paratha and chapati. It can also be served as a side dish with a dal-rice combination too.
In this recipe, I have used a combination of red, yellow, and green bell peppers to make this Capsicum Dry Veg more colorful and appealing to the eyes. However, you may use any color bell pepper (Shimla Mirch) to make this recipe.

How to make Capsicum Dry Veg:
Step1: Heat the oil in a skillet or pan over medium-high heat. Once hot add cumin seeds, saute for 15 seconds, or until it sputters.
Step2: Add sliced capsicum (bell pepper) and fry it for 2-3 minutes on medium flame. I have used red, green, and yellow capsicum in this recipe. You may use any color capsicum which is available.
Step3: Now add sliced onion and chopped green chili, saute it for 2-3 minutes on medium flame till it turns soft.
Step4: Add sliced tomato and mix it well. Cook for 2 more minutes.
Step5: Add 1/2 teaspoon turmeric powder, 1/2 teaspoon Kashmiri red chilly powder, 1/3 teaspoon cumin powder, and salt as per taste. Mix it well.
Step6: Cover and cook it for 4-5 minutes on low flame.
Step7: Open the lid and stir well, now add 1/2 teaspoon garam masala, 1/3 teaspoon sugar, and 1/2 teaspoon dry mango (amchoor) powder. Mix well.
Step8: Cover and cook again for 3-4 minutes on low flame till the capsicum is soft and cooked well (It does not take much time to cook capsicum).
Step9: Check the taste of Capsicum Dry Veg and adjust the spices and salt as per your taste and preference. Garnish it with some fresh coriander leaves.
Step10: Capsicum dry veg is ready. Serve it with roti, chapati, or rice. Enjoy!

- I have prepared this recipe without using garlic and ginger. However, you may add it if you want.
- Do not skip adding sugar, it will enhance the taste of this recipe.
