This traditional Middle-Eastern meal is a healthy and hearty choice for lunch or a heavier snack. Falafel Pita Sandwiches is one of the most delicious ways we know of to get more chickpeas on to your diet. The tahini-yogurt sauce drizzled over top the falafel and the veggies add a creamy texture and appetizing flavor.

The yogurt sauce is a very easy and quick sauce that can be ready in less than 5 minutes. In this blog, I have also shared how to make yogurt sauce in few simple steps.
It is quite filling, and looks and tastes exotic as well, so you can serve it with tea or at a party too. Serve the Falafel Pita Sandwiches as soon as you assemble it because it will get soggy if you let it soak in the dressing for too long.

For Yogurt Sauce
How to make Falafel Pita Sandwiches:
Step1: For Yogurt sauce, In a bowl add all the ingredients mentioned above. Add 1/2 cup yogurt, 1 teaspoon minced or (grated) garlic, 1/4 teaspoon sugar, 2 tablespoon spring onion, and salt as per taste.
Step2: Whisk everything very well. Quick and easy yogurt sauce is ready.
Step4: Prep your veggies. Thinly slice the onion, cucumber, and tomatoes. Shredd some lettuce if required. Cut pita bread into two vertically and slit each half to form a pocket.
Step5: Heat a large frying pan or griddle to medium-high heat. Brush each half with little butter on both sides. Heat the pita rounds for 2 minutes on each side. The pita may begin to brown a little.
Step6: Transfer the pita pocket on a plate. Using a spoon apply around 1-2 teaspoon of tahini sauce and yogurt sauce inside the pita bread. Then add 2-3 slice each of onion, tomato, and cucumber. Add some fresh lettuce leaves.
Step7: Stuff each pita pocket with the 2-3 falafel. Drizzle with the tahini sauce. Falafel Pita Sandwiches is ready. Serve it with yogurt sauce and dive in!
