When Advik and I are wondering what to make for breakfast, it’s often that a veg sandwich recipe comes along as the perfect solution during a busy morning. All you need is 10 minutes to make this sandwich and that’s not a lie. Make the filling, spread it over your favorite bread, and toast or grill it.
I make a variety of sandwiches at home, but this one is my son’s favorite as in this recipe all the veggies are very finely chopped or grated and it does not feel like eating a slice of onion, cucumber, or tomato. Vegetables provide a great subtle crunch to the recipe, but if you have a picky eater, grate or finely chop the veggies and add to the filling.
It is a simple grilled cheesy sandwich recipe prepared with easily available vegetables in your kitchen. This sandwich recipe can be easily customized as per your preferences. It’s an ideal healthy kids lunch box recipe that can also be served as a snack and breakfast.
I have added onion, capsicum, carrot, cabbage, along with mayonnaise and spices. All held together with gooey mozzarella cheese. It’s a grilled cheese match made in heaven. You may also add cucumber, spinach, or any other veggies of your choice. Don’t panic if you don’t have mayonnaise, simply replace it with hung curd or Greek yogurt.

How to make Veg Grilled Cheese Sandwich:
Step1: In a bowl add all the chopped veggies: 1/2 cup shredded cabbage, 1/4 cup grated carrots, 1/4 cup finely chopped onions, 2 tablespoon capsicum.
Step2: Then add 2 tablespoons mayonnaise (or hung curd) along with 1/4 cup Paneer (Indian cottage cheese). I have used mashed paneer, you may also add a slice of paneer after assembling the filling. Adding paneer is optional but it will add extra protein to the sandwich.
Step3: Now add 1/4 teaspoon black pepper powder, 1/4 teaspoon Italian seasoning, 1/2 teaspoon chat masala, Salt to taste, 1/4 teaspoon sugar (optional). You may also add some chopped green chili.
Step4: Mix all the ingredients together. Do not leave out this mixture for too long after adding the spices, otherwise, the vegetables will start to leave the water.
Step5: Spread out the filling evenly on a slice of bread. You can also spread a layer of coriander chutney or tomato ketchup for some extra flavor if you want.
Step6: Top it with some grated mozzarella cheese. You can use any other variety of cheese if you like.
Step7: Cover it with another slice of bread and press gently to bind the bread slices together.
Step8: Heat a Tawa (girdle) or a pan and spread some butter, ghee, or oil on it. Place the sandwich on the Tawa on a low-medium heat setting for 2-3 minutes till the lower side turns golden brown and crisp.
Step9: Then flip the sandwich and repeat for the other side till both the sides are crispy and toast until golden.
Step10: Cut into a triangle and serve Veg Grilled Cheese Sandwich warm. Enjoy!
Tips:
- Use brown or multigrain bread for a healthier choice.
- Toast the bread on tawa or use a sandwich maker or grill to roast golden and crisp.
- You can add veggies of your choice like sweet corn, mushroom, lettuce, cucumber, tomatoes, celery, etc.
- Add some green chutney before adding the filling for a tangy twist.
